Summertime always inspires me to eat more healthily. Salad, for most of the year an afterthought or side dish really comes into the limelight right now. A salad that I could eat every day which makes the most of the British bounty is our ‘Seasons Succotash’ – a colourful mix of broad beans, peas, sweetcorn, cherry tomatoes, lime and fresh basil all in a delicious vinaigrette (available from our Seasons- to- Go menu). It does also go particularly well with marinated Cajun chicken and big dollop of guacamole!
Broad beans are a big favourite of mine, get ‘em young enough, and there is no need to double-pod, or even cook them. They are also really good quickly cooked like in one of our tapas dishes on the menu last night, lightly sautéed in olive oil with shallots, garlic and Wiltshire ham, topped with a smattering of fresh mint.
Strawberries! Who doesn’t love them? (always buy British of course). Make the most of them while you can. Pop them in your granola for breakfast, eat them naked with a light dust of caster sugar, and maybe a naughty glug of double cream a la Wimbledon. Or steep them in a fine orange liqueur such as Grand Marnier along with a little sugar and serve with vanilla bean ice cream……my mouth is watering!

Back in Michigan for the summer and I sure do miss your Huevos Rancheros!! I tried my own version but failed, miserably!!
